  • 3/4 cup apple butter
  • 1/2 cup milk (or non-dairy milk)
  • For the Streusel Topping:
  • 3/4 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, chilled and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and apple butter until fully incorporated. Alternate adding the dry ingredients and the milk to the wet ingredients. Start with the dry ingredients and mix until just combined. Be careful not to overmix to ensure your muffins are light and fluffy.
  3. In a small bowl, combine the flour, granulated sugar, brown sugar, cinnamon, and salt for the streusel topping. Add the chilled butter cubes and use a pastry cutter or your hands to mix until the butter is incorporated and the mixture resembles coarse crumbs.
  4. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping evenly over the batter.
  5. Bake in the preheated oven for 18–22 minutes, or until a toothpick inserted into the center comes out clean. The tops should be golden brown and the streusel should have formed a crisp crust. Remove the muffins from the oven and allow them to cool for a few minutes in the tin before transferring them to a wire rack to cool completely.

  • For Extra Flavor: Add a sprinkle of cinnamon or powdered sugar on top of the muffins after baking.
