Ingredients

Scale
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 3/4 cups almond milk
  • 2 eggs
  • 1/3 cup pure maple syrup
  • 2 tsp pure vanilla extract
  • 2 medium apples, diced small
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the almond milk, eggs, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced apples and chopped pecans.
  6. Transfer the mixture to the prepared baking dish and press down gently.
  7. If desired, top with additional apple chunks and pecans for extra texture.
  8. Bake uncovered for 40–45 minutes, or until the top is golden brown.
  9. Allow the baked oats to cool for 5–10 minutes before slicing and serving.
  10. Store any leftovers in an airtight container in the refrigerator.

Notes

  • For the best texture, use firm apples such as Fuji or Honeycrisp.
  • Baked oats can be frozen in slices for up to 2 months.
