Instructions

  1. Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook for 7-8 minutes, breaking it apart as it browns.
  2. Stir in minced garlic, smoked paprika, and red pepper flakes (if using). Cook for 30 seconds until fragrant. Season with salt and black pepper.
  3. Lower the heat and add heavy cream and mashed butternut squash. Simmer for 3-5 minutes until slightly thickened. Stir in Parmesan cheese until melted.
  4. In a separate pot, boil salted water and cook gnocchi according to package directions until they float (about 2-3 minutes).
