Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon ground cardamom (freshly ground if possible)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and sugar until light and pale.
  3. Mix in the egg and vanilla extract until smooth.
  4. In a separate bowl, whisk together flour, ground cardamom, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Do not overmix.
  6. Portion the dough using a tablespoon or cookie scoop, roll into balls, and place on baking sheets about 2 inches apart.
  7. Gently flatten the tops of the dough balls.
  8. Bake for 10-12 minutes, until edges are golden and centers are soft. Rotate pans halfway through if needed.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
