- 2 lbs Beef Chuck, cut into 1-inch cubes
- 1 tbsp Olive Oil
- 4 cups Beef Broth
- 3 Carrots, sliced into rounds
- 2 Onions, chopped finely
- 4 Garlic Cloves, minced
- 3 Potatoes, diced into cubes
- 2 tbsp Tomato Paste
- 1 tsp Thyme
- Salt and Pepper, to taste
Instructions
- Heat olive oil in your cauldron or Dutch oven over medium heat.
- Add beef cubes and brown on all sides. Remove from pot and set aside.
- In the same pot, sauté chopped onions, sliced carrots, and minced garlic until softened.
- Stir in the tomato paste and cook for one minute.
- Return the browned beef to the pot.
- Add diced potatoes, thyme, beef broth, salt, and pepper.
- Cover the pot and simmer for approximately 2 hours, stirring occasionally, until the beef is tender.
- Check that the beef is thoroughly cooked using a meat thermometer.
Notes
- For best flavor, use beef chuck.
- Feel free to substitute vegetables based on your preference or what you have available.
- To thicken the stew, mash some of the potatoes directly in the pot.
