- 1 lb fresh or frozen cheese tortellini
- 1 lb mild or hot Italian beef sausage, casings removed
- 4 cups fresh broccoli florets, cut into bite-sized pieces
- 4 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 1 large yellow onion, finely diced
- 6–8 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese, plus more for serving
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup fresh parsley, chopped
Instructions
- Prepare Ingredients: Remove beef sausage casings. Finely dice onion, mince garlic, and chop broccoli into bite-sized florets. Grate Parmesan cheese and measure out remaining ingredients.
- Cook Beef Sausage & Broccoli: In a large skillet over medium-high heat, brown beef sausage in 1 tbsp olive oil, breaking it up. Cook 8-10 min until browned. Drain sausage, leaving 1 tbsp fat in the pan. Add remaining 1 tbsp olive oil and broccoli florets to skillet; sauté 5-7 min until tender-crisp. Remove broccoli and sausage from skillet.
- Make Creamy Garlic Parmesan Sauce: Reduce heat to medium. Melt 2 tbsp butter in skillet. Sauté diced onion 3-5 min until soft, then add minced garlic and cook 1 min. Stir in 1/4 cup flour and cook for 1-2 min. Gradually whisk in 2 cups chicken broth until smooth, then stir in 1 1/2 cups heavy cream. Bring to a gentle simmer, stirring until thickened. Remove from heat, stir in 1 cup freshly grated Parmesan cheese until melted. Season with 1 tsp salt, 1/2 tsp black pepper, and optional 1/4 tsp red pepper flakes.
- Combine & Serve: Cook tortellini in boiling salted water according to package directions until al dente; drain well. Add drained tortellini, cooked beef sausage, and broccoli back into the skillet with the sauce. Toss gently to combine. Serve immediately, garnished with extra Parmesan and fresh chopped parsley.
