Description

A creamy and flavorful roasted chicken dish with tender chicken, aromatic spices, and tender zucchini, offering a delightful culinary experience perfect for any occasion.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with smoked paprika, salt, and black pepper on both sides.
  3. In a large oven-safe skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional minute.
  4. Stir in the sliced zucchini and cook for 5 minutes until starting to soften.
  5. Push the vegetables to one side of the skillet. Place the chicken breasts in the center of the skillet and sear them for about 3-4 minutes on each side until golden brown.
  6. Pour the heavy cream over the chicken and vegetables, stirring gently to mix.
  7. Transfer the skillet to the preheated oven. Roast for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  8. Once cooked, remove from the oven and let it rest for a few minutes. Sprinkle fresh parsley on top before serving.

Notes

  • Use fresh ingredients for the best taste.
  • Season generously to enhance the dish.

  • For a spicier dish, add red pepper flakes.
  • Swap zucchini for other vegetables like bell peppers or asparagus.
  • Add fresh herbs like thyme or basil towards the end of cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to three days.
  • The dish can be frozen for up to two months. Let cool completely before freezing.
