  • 2 Russet potatoes, peeled and sliced into thin strips
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley
  • Optional: Paprika or chili flakes for a spicy twist

Instructions

  1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper or a silicone mat.
  2. Peel and wash the Russet potatoes. Slice them into thin strips about 1/4-inch thick.
  3. Place the sliced potatoes into a bowl of cold water and let them sit for 15 minutes to remove excess starch.
  4. Drain the potatoes and pat them dry with a clean towel or paper towels.
  5. In a large mixing bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.
  6. Spread the potatoes evenly on the prepared baking sheet, ensuring they don’t overlap. Bake for 25 minutes, flipping them halfway through.
  7. While the fries are baking, melt butter in a small saucepan. Add minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in grated Parmesan cheese.
  8. Once the fries are golden and crispy, transfer them to a serving bowl. Pour the garlic butter and Parmesan mixture over the fries, tossing gently to coat.
  9. Sprinkle dried parsley and extra Parmesan on top if desired. Serve immediately.
