- 2 Russet potatoes, peeled and sliced into thin strips
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried parsley
- Optional: Paprika or chili flakes for a spicy twist
Instructions
- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper or a silicone mat.
- Peel and wash the Russet potatoes. Slice them into thin strips about 1/4-inch thick.
- Place the sliced potatoes into a bowl of cold water and let them sit for 15 minutes to remove excess starch.
- Drain the potatoes and pat them dry with a clean towel or paper towels.
- In a large mixing bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.
- Spread the potatoes evenly on the prepared baking sheet, ensuring they don’t overlap. Bake for 25 minutes, flipping them halfway through.
- While the fries are baking, melt butter in a small saucepan. Add minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in grated Parmesan cheese.
- Once the fries are golden and crispy, transfer them to a serving bowl. Pour the garlic butter and Parmesan mixture over the fries, tossing gently to coat.
- Sprinkle dried parsley and extra Parmesan on top if desired. Serve immediately.
