Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, cream together 1 cup of softened unsalted butter and 1 1/4 cups granulated sugar until light and fluffy. Beat in 2 large eggs and 2 teaspoons vanilla extract.
- In a separate bowl, whisk together 2 1/2 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt. Gradually add the dry mixture to the wet ingredients until combined.
- Spread the dough evenly in the prepared pan. Bake for 20-25 minutes, or until the edges are lightly golden. Let cool completely in the pan.
- Beat 1/2 cup softened butter with 2 cups powdered sugar until smooth. Add 2 tablespoons heavy cream and 1 teaspoon vanilla extract, beating until fluffy.
- Spread the frosting over the cooled cookie bars. Sprinkle generously with holiday sprinkles.
- Cut into squares or rectangles, and serve.
