Ingredients

  • 3 to 4 lb chuck roast
  • 2 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1½ cups beef broth
  • 1 tbsp cornstarch + 1 tbsp water (for slurry, optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Set your Instant Pot to “Sauté” mode. Add olive oil and sear the chuck roast for 3–4 minutes on each side until browned. Remove and set aside.
  2. Add butter to the pot, followed by the sliced onions. Cook for 8–10 minutes, stirring often, until soft and golden. Add garlic and cook for another 30 seconds.
  3. Deglaze the pot with Worcestershire sauce and beef broth, scraping up any browned bits from the bottom. Stir in thyme, salt, and pepper.
  4. Return the seared roast to the pot, nestling it into the onion mixture. Lock the lid and set the valve to “Sealing.” Cook on High Pressure for 60 minutes.
  5. Allow a natural release for 15 minutes, then release any remaining pressure.
  6. Remove the roast and shred it using two forks. If desired, set the Instant Pot to “Sauté,” add the cornstarch slurry, and stir until thickened.
  7. Spoon the onion gravy over the shredded beef and garnish with parsley. Serve hot with your favorite sides.
