- 2 tbsp olive oil
- 2 large yellow onions, thinly sliced
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp ground black pepper
- 1½ cups beef broth
- 1 tbsp cornstarch + 1 tbsp water (for slurry, optional)
- Fresh parsley for garnish (optional)
Instructions
- Set your Instant Pot to “Sauté” mode. Add olive oil and sear the chuck roast for 3–4 minutes on each side until browned. Remove and set aside.
- Add butter to the pot, followed by the sliced onions. Cook for 8–10 minutes, stirring often, until soft and golden. Add garlic and cook for another 30 seconds.
- Deglaze the pot with Worcestershire sauce and beef broth, scraping up any browned bits from the bottom. Stir in thyme, salt, and pepper.
- Return the seared roast to the pot, nestling it into the onion mixture. Lock the lid and set the valve to “Sealing.” Cook on High Pressure for 60 minutes.
- Allow a natural release for 15 minutes, then release any remaining pressure.
- Remove the roast and shred it using two forks. If desired, set the Instant Pot to “Sauté,” add the cornstarch slurry, and stir until thickened.
- Spoon the onion gravy over the shredded beef and garnish with parsley. Serve hot with your favorite sides.
