Ingredients
Scale
- 1 ½ lbs ground beef, 80/20
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp olive oil or butter for frying
- 2 tbsp unsalted butter
- 1 large onion, thinly sliced
- 8 oz mushrooms, sliced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tsp Worcestershire sauce
- ½ tsp dried thyme (optional)
- Salt and pepper to taste
Instructions
- Prepare the patties: In a bowl, combine ground beef, diced onion, garlic, Worcestershire sauce, salt, pepper, onion powder, and garlic powder. Mix gently until combined. Form into 4 equal patties.
- Sear the patties: Heat olive oil in a large skillet over medium-high heat. Add the patties and cook for 4–5 minutes per side until browned. Remove from skillet and set aside.
- Cook onions and mushrooms: In the same skillet, melt butter. Add sliced onions and cook for 5 minutes until softened. Stir in mushrooms and cook until browned, about 5 minutes more.
- Make the gravy base: Sprinkle flour over the onions and mushrooms. Stir for 1–2 minutes until flour is absorbed. Slowly whisk in beef broth, scraping up browned bits from the pan. Add Worcestershire sauce and thyme. Simmer for 3–4 minutes until thickened.
- Return patties to pan: Place hamburger steaks back into the skillet. Spoon gravy over them. Cover and simmer on low heat for 10 minutes, allowing flavors to meld.
- Serve: Serve hot with mashed potatoes, rice, or egg noodles, topped generously with onion mushroom gravy.
Notes
- Use 80/20 ground beef for tender, flavorful patties.
- Do not overmix the beef mixture for tender steaks.
- Sear patties first to lock in juices and flavor.
- Caramelize onions slowly for natural sweetness.
- Whisk broth gradually to avoid lumps in the gravy.
- Taste and adjust seasoning before serving.
- Omit mushrooms if you prefer just onion gravy.
- For gluten-free, use cornstarch instead of flour for the gravy.
- Add chili flakes or cayenne to the beef mix for a spicy version.
- Add a splash of cream or half-and-half at the end for a creamy gravy.
- Store in an airtight container in the refrigerator for up to 3 days.
- Freeze patties and gravy together for up to 2 months.
- Reheat gently on the stovetop over low heat, adding a splash of broth to loosen the gravy.
