Ingredients

  • 3 lbs beef chuck roast, cut into 2-inch chunks
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp sesame oil
  • 1/4 cup ketchup
  • 2 tbsp rice vinegar
  • 3 green onions, sliced for garnish

Instructions

  1. Trim excess fat from the beef chuck roast and cut it into 2-inch chunks.
  2. Sauté minced garlic and grated ginger in a skillet over medium heat until fragrant (about 1-2 minutes).
  3. Transfer the sautéed aromatics to a slow cooker along with the beef chunks.
  4. Add low-sodium soy sauce, brown sugar, sesame oil, ketchup, and rice vinegar to the slow cooker.
  5. Cook on low for 6-8 hours or high for about 4 hours until the beef is fork-tender.
  6. Shred the beef with two forks in the slow cooker and mix well with the sauce before serving over rice or noodles. Garnish with sliced green onions.
