- 3 lbs beef chuck roast, cut into 2-inch chunks
- 4 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tbsp sesame oil
- 1/4 cup ketchup
- 2 tbsp rice vinegar
- 3 green onions, sliced for garnish
Instructions
- Trim excess fat from the beef chuck roast and cut it into 2-inch chunks.
- Sauté minced garlic and grated ginger in a skillet over medium heat until fragrant (about 1-2 minutes).
- Transfer the sautéed aromatics to a slow cooker along with the beef chunks.
- Add low-sodium soy sauce, brown sugar, sesame oil, ketchup, and rice vinegar to the slow cooker.
- Cook on low for 6-8 hours or high for about 4 hours until the beef is fork-tender.
- Shred the beef with two forks in the slow cooker and mix well with the sauce before serving over rice or noodles. Garnish with sliced green onions.
