Description

This hearty Italian Sausage Tortellini Soup is a comforting one-pot meal perfect for cozy fall nights. It features savory Italian sausage, tender cheese tortellini, fresh spinach, and a rich tomato broth, all coming together in under 40 minutes.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup heavy cream (optional)
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage, breaking it up, and cook until browned. Drain excess grease if necessary.
  2. Stir in onion and garlic. Cook for 2–3 minutes until soft and fragrant.
  3. Add chicken broth, diced tomatoes, tomato sauce, and Italian seasoning. Bring to a gentle boil, then simmer for 10 minutes. Season with salt and pepper.
  4. Stir in tortellini and cook according to package directions, usually 5–7 minutes.
  5. Add spinach and cream (if using). Stir until spinach wilts and soup is creamy.
  6. Ladle into bowls and top with grated Parmesan cheese.

Notes

  • Use fresh tortellini for best flavor and texture.
  • Don’t overcook tortellini—add it near the end.
  • Brown the sausage well to add depth of flavor.
  • Soup tastes even better the next day as flavors meld.
  • For a dairy-free version, omit the cream or use a non-dairy substitute.
