- 4 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes

- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 (9-ounce) package refrigerated cheese tortellini
- 2 cups fresh spinach, roughly chopped
- 1/2 cup heavy cream (optional)
- Grated Parmesan cheese, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage, breaking it up, and cook until browned. Drain excess grease if necessary.
- Stir in onion and garlic. Cook for 2–3 minutes until soft and fragrant.
- Add chicken broth, diced tomatoes, tomato sauce, and Italian seasoning. Bring to a gentle boil, then simmer for 10 minutes. Season with salt and pepper.
- Stir in tortellini and cook according to package directions, usually 5–7 minutes.
- Add spinach and cream (if using). Stir until spinach wilts and soup is creamy.
- Ladle into bowls and top with grated Parmesan cheese.
