Description

Monster Eye Brownie Bites are rich, fudgy, bite-sized chocolate brownies topped with colorful frosting and candy eyes. They are a fun and easy Halloween treat perfect for parties and bake sales.


Ingredients

  • 2 cups (400 g) granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup (120 g) all-purpose flour
  • 1 cup (120 g) unsweetened cocoa powder
  • ½ tsp salt
  • ½ cup (90 g) mini chocolate chips (optional)
  • Assorted candy eyes for decoration
  • Frosting or candy melts (in Halloween colors: orange, green, purple)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin pan with nonstick spray or line with paper cups.
  2. In a large mixing bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract, mixing until combined.
  3. Sift in flour, cocoa powder, and salt. Gently fold until just combined. Do not overmix. Stir in mini chocolate chips if using.
  4. Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
  5. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Avoid overbaking for fudgy texture.
  6. Allow brownies to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  7. Once cooled, pipe frosting or drizzle melted candy melts on top of each brownie bite. Before it sets, add candy eyes to give each one a fun, monster-like appearance.
