Description

Irresistible no-bake pumpkin cheese balls perfect for fall and Thanksgiving. These creamy, spiced bites combine pumpkin puree, cream cheese, and graham crackers for a festive and easy-to-make dessert.

Ingredients

Scale
  • 1 cup canned pumpkin purée (not pumpkin pie filling)
  • 8 oz cream cheese, softened
  • 1 cup crushed graham crackers (plus more for rolling)
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Optional: White chocolate chips or almond bark for coating
  • Optional: Crushed nuts, sprinkles, or cinnamon sugar for decoration

Instructions

  1. Prepare the filling: In a large bowl, combine softened cream cheese and pumpkin purée. Mix until smooth.
  2. Add flavorings: Stir in maple syrup, vanilla, pumpkin pie spice, and cinnamon until creamy.
  3. Thicken: Fold in crushed graham crackers until mixture firms up. Chill for 15–20 minutes if too soft.
  4. Shape: Scoop about 1 tablespoon and roll into balls. Place on a parchment-lined tray.
  5. Coat and decorate: Roll in more crushed graham crackers or dip in melted white chocolate. Add sprinkles, nuts, or cinnamon sugar if desired.
  6. Chill: Refrigerate for at least 30 minutes before serving.

Notes

  • If the mixture is too sticky, chill before shaping.
  • Crushed gingersnaps or vanilla wafers can replace graham crackers.
  • Dairy-free cream cheese works well for a dairy-free option.
  • Decorate seasonally with sprinkles, nuts, or melted chocolate drizzle.
  • Freeze for up to 2 months; thaw in fridge before serving.
