- 1 cup crushed graham crackers (plus more for rolling)
- 1/4 cup maple syrup (or honey)
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Optional: White chocolate chips or almond bark for coating
- Optional: Crushed nuts, sprinkles, or cinnamon sugar for decoration
Instructions
- Prepare the filling: In a large bowl, combine softened cream cheese and pumpkin purée. Mix until smooth.
- Add flavorings: Stir in maple syrup, vanilla, pumpkin pie spice, and cinnamon until creamy.
- Thicken: Fold in crushed graham crackers until mixture firms up. Chill for 15–20 minutes if too soft.
- Shape: Scoop about 1 tablespoon and roll into balls. Place on a parchment-lined tray.
- Coat and decorate: Roll in more crushed graham crackers or dip in melted white chocolate. Add sprinkles, nuts, or cinnamon sugar if desired.
- Chill: Refrigerate for at least 30 minutes before serving.

- If the mixture is too sticky, chill before shaping.
