  • 1.5 pounds large or jumbo shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley or cilantro, chopped
  • Salt and freshly ground black pepper to taste
  • 1 pint strawberries, diced
  • 1/4 cup fresh basil, sliced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons lime juice
  • Optional: chili flakes or hot sauce
  • Cooked rice, quinoa, or greens for serving

Instructions

  1. In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, chopped parsley (or cilantro), salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat. Let marinate for at least 15 minutes.
  3. While the shrimp marinates, prepare the strawberry-basil salsa: In a separate bowl, combine diced strawberries, sliced basil, finely chopped red onion, lime juice, salt, and pepper. Add chili flakes or hot sauce if desired. Stir gently to combine.
  4. Heat a large skillet or grill pan over medium-high heat. Add a drizzle of olive oil if needed.
  5. Add the marinated shrimp to the hot skillet in a single layer. Cook for 2-3 minutes per side, until pink and cooked through.
  6. Serve the saucy lemon herb shrimp immediately over your choice of cooked rice, quinoa, or greens. Top generously with the strawberry-basil salsa.

Notes

  • For best results, use large or jumbo shrimp (16/20 or 21/25 count per pound).
  • Tail-on shrimp can be used for presentation, but peeled and tail-off are also fine.
  • Do not use pre-cooked shrimp, as they can become rubbery.
  • Feel free to substitute strawberries with diced mango or pineapple, and basil with mint or cilantro.
  • Lime juice can be used instead of lemon juice in the salsa if preferred.
