This Spooky Spaghetti & Cheesy Monster Meatballs recipe is a frightfully fun Halloween dinner idea. It features gooey cheese-stuffed monster meatballs with olive eyes, served on a bed of creepy spaghetti. It’s perfect for Halloween parties, family dinners, or spooky potlucks.

  • For the Cheesy Monster Meatballs:
  • 1 lb ground beef (or turkey/chicken)
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper, to taste
  • 1 cup mozzarella cheese, cubed (for stuffing)
  • Black olives, sliced (for eyes)
  • Mozzarella cheese slices (for the whites of the eyes)
  • Optional: parsley or Italian seasoning
  • For the Spooky Spaghetti:
  • 1 lb spaghetti (regular or black/purple pasta)
  • Salted water (for boiling)
  • 2 tbsp olive oil
  • Red or green food coloring (optional)
  • 3 cups marinara or spaghetti sauce

Instructions

  1. Preheat oven to 400°F (200°C). Mix ground beef, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Flatten a spoonful, place a cheese cube inside, and roll into a ball.
  2. Place meatballs on a lined baking sheet and bake 18–20 minutes until cooked through and golden.
  3. Boil pasta as directed. Add food coloring to water for a spooky effect if desired. Drain and toss with olive oil.
  4. Heat marinara sauce in a skillet and toss pasta until coated.
  5. Add mozzarella circles and olive slices to meatballs for ‘eyes’. Secure with sauce if needed.
  6. Serve pasta on a platter topped with monster meatballs and extra sauce.

Notes

  • Serve pasta in mini cauldrons or black bowls for extra spooky flair.
  • Tint pasta with different colors for a ‘worms’ effect.
