- 2 lbs sweet potatoes (peeled and sliced)
- 1 cup packed brown sugar
- 4 tbsp unsalted butter
- 1 tsp ground cinnamon
- 1 tsp pure vanilla extract
- 1/2 cup water
Instructions
- Peel and slice the sweet potatoes into thick, uniform pieces. Rinse under cold water.
- In a saucepan over medium heat, melt the butter and stir in the brown sugar, water, cinnamon, and vanilla until bubbling (3-5 minutes).
- Add the sweet potatoes to the bubbling syrup and stir gently to coat.
- Cover and reduce heat to low; simmer for 30-40 minutes until fork-tender but not mushy.
- Serve warm on a platter with extra syrup drizzled on top.
