Ingredients

  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 1 lime, juiced
  • Fresh cilantro, chopped, for garnish
  • 1/4 cup shredded cheese (optional)
  • Sour cream or Greek yogurt (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
  2. Add the minced garlic and diced bell pepper to the skillet. Cook for another 2-3 minutes until fragrant.
  3. Stir in the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Toast for 1-2 minutes to release their flavors.
  4. Add the black beans and corn to the skillet. Stir well to combine and heat through for 3-4 minutes. Season with salt and black pepper to taste.
  5. Squeeze the lime juice over the mixture and stir. Remove the skillet from heat.
  6. Serve the One-Pan Southwest Black Bean Skillet in bowls. Garnish with fresh cilantro, shredded cheese, and a dollop of sour cream or Greek yogurt, if desired.
