- 1/4 teaspoon smoked paprika

- 1 lime, juiced

- Sour cream or Greek yogurt (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- Add the minced garlic and diced bell pepper to the skillet. Cook for another 2-3 minutes until fragrant.
- Stir in the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Toast for 1-2 minutes to release their flavors.
- Add the black beans and corn to the skillet. Stir well to combine and heat through for 3-4 minutes. Season with salt and black pepper to taste.
- Squeeze the lime juice over the mixture and stir. Remove the skillet from heat.
