- 2 tablespoons butter
- 1 cup chopped onion
- 1 cup chopped celery
- 2 cloves garlic, minced
- 1 pound mushrooms (cremini or baby bella), sliced
- 2 tablespoons all-purpose flour
- 6 cups chicken broth or stock
- 2 cups shredded rotisserie chicken
- 1/2 cup heavy cream or half and half
- 2 cups fresh spinach
- 1 teaspoon dried thyme, or 1 tablespoon fresh thyme
- Salt and black pepper to taste
Instructions
- Melt butter in a large soup pot over medium heat. Add onion and celery; cook until softened, about 5 minutes. Stir in garlic and cook for 30 seconds until fragrant.
- Add sliced mushrooms and cook until they release their liquid and begin to brown, about 5-7 minutes.
- Sprinkle flour over the vegetables and mushrooms. Stir and cook for 1 minute.
- Gradually whisk in chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
- Add shredded rotisserie chicken and thyme. Simmer for 10 minutes to allow flavors to meld.
- Stir in heavy cream and spinach. Cook until spinach is wilted, about 2-3 minutes.
- Season with salt and black pepper to taste. Serve hot.
Notes
- For a dairy-free option, use coconut milk or unsweetened plant-based milk instead of heavy cream.
- If you don’t have rotisserie chicken, any cooked shredded chicken breast or thigh will work.
- Substitute zucchini or chopped cauliflower for mushrooms if preferred.
- Use kale or Swiss chard instead of spinach if desired.
- For a gluten-free version, use cornstarch or arrowroot instead of flour for thickening and ensure your broth is gluten-free.
