- 2 eggs
- 1/4 cup water (plus more as needed)
- 2 1/4 cups whole wheat flour
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the mashed sweet potato, peanut butter, and eggs. Stir until smooth.
- Gradually add the whole wheat flour to the wet ingredients, stirring to form a thick dough. Add water a tablespoon at a time if needed.
- Lightly flour a surface and roll the dough to about 1/4-inch thickness. Cut out cookies using your preferred cutters.
- Arrange the cookies on the prepared baking sheet. Bake for 25 to 30 minutes, or until firm and lightly golden.
