- 1 cup (240ml) full-fat coconut milk
- 1 cup (170g) dairy-free chocolate chips
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- For Garnish:
- Fresh mint leaves or edible gold leaf (optional)
- Cocoa powder for dusting (optional)
Instructions
- Prepare the Gingerbread Crust: Preheat oven to 350°F (175°C). Grease a tart pan with a removable bottom. In a bowl, mix almond flour, oat flour, coconut flour, ginger, cinnamon, nutmeg, and salt. Add maple syrup, melted coconut oil, and water. Mix until dough forms. Press dough into pan and bake for 10-12 minutes until lightly golden. Allow it to cool.
- Make the Chocolate Filling: In a saucepan, heat coconut milk over medium heat. Remove from heat and stir in chocolate chips. Stir until smooth. Add maple syrup, vanilla extract, and salt, and mix until combined.
- Assemble the Tart: Pour chocolate filling into the cooled crust. Smooth it evenly with a spatula.
- Refrigerate for at least 4 hours, or overnight if possible, to set.
- Garnish and Serve: Garnish with fresh mint, cocoa powder, or edible gold leaf before serving. Enjoy chilled.
